My Famous Banana Bread

MY FAMOUS BANANA BREAD
Ingredients:

2 cups of all purpose flour
2 cups of white sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tbsp. ground cinnamon (optional)

6 medium ripe bananas
4 eggs
1 cup of cooking oil
1 tsp. vanilla extract

In a medium mixing bowl, add and mix all dry ingredients.

In a separate medium mixing bowl, blend all the rest of ingredients and add dry ingredients. Beat on medium speed for 2 minutes.

Pour mixture into a greased pan (i.e. 13 x 9 or two round 8") and bake at 325 F preheated oven for approximately 45 minutes or until toothpick inserted in centre comes out clean. Remove from oven and let cool for 10 minutes before serving.

Chocolate lover? Simply add a small package of chocolate chips into the mixture before baking and voila! You'll have an instant Chocolate Banana Bread.

Replace bananas with 4 cups of grated carrots to make Carrot Cake.

Simply bake mixture in lined muffin tray to make delicious Banana Muffins.

This recipe is great for snacks and lunches specially for kids!

Raisin Butter Tarts

RAISIN BUTTER TARTS
Ingredients:

1 egg
1 cup brown sugar
3 tbsp. milk
1 tsp. vanilla extract
1/3 cup margarine
1/2 cup of raisins
1 package (12's) of frozen tart shells (large)

In a medium bowl, mix all ingredients well. Place and separate tart shells on a cookie sheet. Using a spoon, fill about 2 spoonfuls of mixture to each tart shell. Bake at 375 degrees F in a preheated oven for about 20 minutes or until tart shells are just barely turning brown. Remove from oven and let cool for a few minutes before serving.

Recipe yields 12 large Raisin Butter Tarts.


*Tips and Tricks*

Omit the raisins from the ingredients if you just want to make Butter Tarts.

Do you have a sweet tooth? Just simply add more raisins to the ingredients to make it sweeter.

Chewy Chocolate Chip Cookies



CHEWY CHOCOLATE CHIP COOKIES

Ingredients:

1 cup margarine
1 cup brown sugar
1/2 cup white sugar
1 tsp. vanilla extract
2 large eggs
2 cups plus 4 tbsp. all purpose flour
1 tsp. baking soda
1 small package (300 g) chocolate chips
1 cup nuts (optional)

In a large bowl, mix all ingredients well. Put a spoonful of cookie dough on a cookie sheet (place 12 on a standard cookie sheet) and bake at 325 degrees F (preheated oven) for about 12 minutes or until barely turning brown. Remove from oven and let cool. Store cookies in a covered cookie jar or container to keep it chewy.

Recipe yields approximately 3 dozen.

Warm up cookies in the microwave for a few seconds to give them that fresh-from-the-oven sensation!

Turn this recipe into Chewy Reese Peanut Butter Cookies simply by replacing the chocolate chips with Reese peanut butter chips.

Or mix and match!! Add half a package of chocolate chips and half a package of Reese peanut butter chips to make Chewy Chocolate Reese Peanut Butter Cookies!
